PRODUCTION AREA - Rural area of the towns of Manduria and Sava, in the province of Taranto
VINEYARDS: Traditional Apulian sapling with a density of about 5000 plants per hectare, with a yield of 2 kg of grapes per plant
VINIFICATION - The grapes are de-stemmed and fermented in steel at a controlled temperature of 25 ° C. Maceration for 15/20 days with repeated daily assembly and subsequent soft pressing of the marc. At the end of this step the
alcoholic and malolactic fermentation is completed.
MATURATION - 6 months in steel tanks
TASTING
Intense purple color, tending to amber with aging
Nose The bouquet has pleasant fruity notes, which leave room for spicy hints in the finish
Taste This wine has a very solid structure thanks to the high alcohol content and the balance between soft tannins and acidity.
ALCOHOL CONTENT – 14,5% by vol.
NOTES - Excellent wine for roasted and grilled meats. Ideal with game dishes and aged cheeses
